
Harvest and Winemaking
De Sterlich wines express the full natural character of our terroir, as they are produced according to organic and biodynamic principles.
All fermentations are spontaneous, and the wines are made exclusively from hand-harvested grapes collected in small crates, with careful respect for the level of ripeness in each individual vineyard.
The wine is produced from settled must obtained from selected grapes sourced from different areas of the Estate, with every technical detail evaluated throughout the entire process.
Vinification and ageing take place in stainless steel, concrete, and amphora for a minimum of 12 months. After bottling, the wine continues its evolution in bottle for the time required before being released to the market.
